- Fat-free milk ½ Cup
- Finely shredded ornge peel ½ Tsp
- Vanilla Extract ¼ Tsp
- Ground cinnamon or nutmeg ⅛ Tsp
- Whole grain bread Nonstick cooking spray 8 Slices
- Powdered sugar (optional)
- Fresh Blueberries ¾ Cup
- Light pancake syrup ½ Cup
- Sliced fresh strawberries (optional)

Method
- In a shallow bowl beat eggs with a fork or wire whisk. Beat in milk, orange pel, vanilla, and cinnamon. Dip bread into egg mixture, turning to coat both sides.
- Coat an unheated large nonstick skillet or griddle with nonstick cooking spray. Preheat over medium heat. Place bread on hot skillet or griddle; cook for 4 to 6 minutes or until golden brown, turning once. Serve warm. If desired, dust with powdered sugar. Serve with blueberries and syrup. If desired, garnish with strawberries.
