Malaysian Beff Chicken Satay

The juicy and tender chunks of beef covered in the warmth of curry spices and a hint of sweetness then paired with a creamy peanut sauce make this Malaysian Beef Satay totally delicious! The marinade in this recipe works brilliantly with beef and pork, too.

An aromatic marinade flavors chunks of lean beef to skewer and quick-cook on the grill. Serve the meat on or off the skewers, with hot rice and thinly sliced cucumbers and red onions. (If you use bamboo skewers, soak them in warm water before threading the meat.)

  • Garlic 2 Cloves
  • Onions 1 Large
  • Ground cumin 2 Tbsp
  • Ground coriander 2 Tbsp
  • Sugar 1 Tbsp
  • Ground turmeric 1 Tbsp
  • Fresh lemon grass 1 Stalk
  • Vegetable Oil 2 Tbsp

  • In a blender or food processor, combine garlic, onion, cumin, coriander, sugar, turmeric, lemon grass, and oil. Whirl until smooth; then transfer to a large bowl.
  • Cut beef into 1 inch cubes; add to marinade and mix to coat well. Then thread beef on five 14-inch-long metal or bamboo skewers.
  • Place skewers on a lightly oiled grill 4 to 6 inches above a solid bed of very hot coals (you can hold your hand at grill level for only 1 to 2 seconds) or over very high heat on a gas grill. Close lid on gas grill. Cook, turning as needed to brown evenly, until beef is done to your liking; cut to test (5 to 7 minutes for medium). Serve beef on or off skewers; season to taste with salt.
