How To Make the Berry and Arugula Salad
Yes, this Arugula And Blueberry Salad is bursting with healthy antioxidants and omega oils, but it’s also bursting with flavor. Peppery arugula, sweet, tart berries, creamy avocado and savory walnuts are a magical combination. The raspberry vinaigrette is amazing when made with walnut oil, but olive oil can be substituted if desired.
- Blueberry 1 Cup
- Arugula 4 Handfuls
- Walnut Oil 1 Cup
- Avocado 2 Pc
- Walnut Oil ¼ Cup
- White wine 1 Tablespoon
- Raspberry ¼ Cup
- Salt to taste
- Drizzle raspberry dressing over salad, toss and serve.
- In a large bowl, mix together blueberries, arugula, walnuts and avocado.
- In a blender, combine walnut oil, vinegar, homey and raspberries until well-rounded and smooth. And salt to taste.
Quick & Easy Tip:
Arugula has a slightly bitter taste that works well here. It’s a perfect foil for the salty feta, juicy sweet berries and sugary pecans. I think you should stick with it.
If you simply cannot stand or cannot get arugula, you could use baby kale or spring mix. However, I’d then recommend adding some fresh basil, endive, or dandelion greens to the lettuce to give it a little more bite.
